This is a lively, tangy salad which is a great with the spiciness of a meal and serves 6 people
- 1 large cucumber cut into 1cm cubes
- 7 large ripe tomatoes cut into 1 cm cubes
- ½ tsp sea salt flakes
- A large handful of coriander leaves chopped
- Juice of one lime
Place all the ingredients into a bowl and squeeze over the lime juice. Mix together and serve.
